My Saag Aloo Recipe

2 tbsp sunflower oil
1 tomato, chopped
1 onion, finely chopped
2 garlic cloves, finely chopped 
1 tbsp chopped ginger
500g potato (boiled) cut into medium pieces 
1 large red chilli, halved, deseeded and finely sliced
½ tsp mustard seeds,
½ tsp cumin seeds,
½ tsp turmeric
1 tsp of garam masala
100g spinach leaves

1. Heat the oil in arge pan

2. Add the onion, garlic and ginger, and fry for about 3 mins 3. Stir in the potatoes, chili, tomato, spices and half a tsp salt and continue cooking and stirring for 5 mins more
4. Add a splash of boiling water, cover, and cook for 5-7 mins
5. Add the spinach and let it wilt into the pan

6. Take off the heat and serve.
7. Enjoy!
